This is refreshing and is very thirst-quenching. Ginger juice is well consumed during the hot season in guinea. It’s often found on sale at road stations, in school exits and sporting stadium exits.
Ingredients (For 8 serves)
250 gr rooths ginger
2 Oranges and 1 lime
180 gr sugar
2 litre of water

Preparation
Wash and peel the giger
Grate the ginger in a large bowl
Pour the water into the bowl and let infuse for 2 hours, preferably overnight in the refrigerator.
Once water is coloured, remove from the fridge, stir well and remove the bulk of ginger.
Strain juice to remove any residue of ginger.
Press the lemon and oranges and add the juice and sugar to the ginger drink .
Stir well until the sugar is completely dissolved.
Taste to check if the drink is to taste and add sugar if necessary or water if the drink is too “hot”.
Using a funnel pours the drink into a jug or bottle. Refrigerate until ready to serve.

Tips and Tricks
- For more variety, Lime juice can also be replaced by pineapple juice as per season and according to taste.
- The ginger’s roots can also be grated with the skin; the only drawback being the darker colour of juice.
- Some people add vanilla’s glove, orange blossom or bunch of fresh mint. It’s up to you to choose your flavour.
