Cooked banana plantain is very prized food across West Africa, West Indies and South America. Plantains look like larger versions of bananas. The green skin is thicker than the one of the banana with a less sweetened flesh. It has green to yellow colour and darkens when it ripe. The plantain is not edible raw and must be cooked. It can be boiled, baked, grilled and often fried, one uses it especially as vegetable ; its consistency as well as it flavour recall a little the sweet potatoes .
