A slightly acidulated drink! It allies magnificently the taste of the pineapple and that of the Baobab. Also known in Senegal as «mbouye» or also as “monkey’s bread “. One can make the juice with either the fruits or extracted powder which is sold on most western Africa markets. The fruit can be also sucked simply as a candy.
Ingredients (For 2 liters)
250g Baobab fruits
3/4 liter of water
1/2 liter of fresh milk (optional)
1/2 liter of Pineapple Juice
150 g of sugar
30 gr Vanilla sugar (optional)
Preparation
Dip the Baobab fruit’s into the water and let it infuse for at least 30 minutes.
Stir well and remove the black seeds. Add the fresh milk.
Peel and cut the pineapple into small pieces and extract the juice with a blender.
Add the pineapple juice to the baobab milky juice, mix well and sugar to taste.
Taste and adjust sugar as you like sweeter or more water as you prefer smoother or not.
Tips and Tricks
You can either buy pineapple juice from the super market, but it has to be 100 % fruit without any additive or rather pressed a fresh pineapple, which is even better.
- Keep the juice in the refrigerator before serving.
- Serve chilled or you can add crushed ice.
- If you do not wish to add milk, add either the pinaple juice or Boabab fruit powder and water to complete the 2 liters.
